Recipe 1. Savory Millet Porridge with Hemp and Callaloo

- 1 tablespoon extra-virgin olive oil (14 g)
- 1/4 cup full-fat coconut milk (60 g)
- 4 tablespoons hulled hemp seeds (40 g)
- 2 tablespoons nutritional yeast (15 g)
- 1 small pinch sea salt (1 g)
- 1/2 teaspoon black pepper (1 g)
Preparation
- Rinse the millet in a fine sieve until the water runs clear. Put it in a medium pot with the water and bring to a boil.
- Lower the heat, cover, and simmer 20 to 25 minutes, stirring now and then, until the millet is soft and the porridge is thick and creamy.
- While the millet cooks, warm the olive oil in a skillet over medium heat. Add the onion and cook 4 minutes until soft.
- Add the garlic, thyme, and chopped callaloo. Cover and cook 5 to 6 minutes until the greens are tender, stirring once.
- Stir the coconut milk, nutritional yeast, salt, and pepper into the finished porridge until smooth.
- Fold the cooked callaloo into the porridge. Spoon into bowls and top each with 2 tablespoons of hemp seeds and the sliced scallion.

Preparation

Preparation
